I noticed that for a while now my default profile got screwed up. I had a default profile and then two different profiles for people who follow me. Whenever I followed someone the default profile was set as the one they see and I'd change it if I wanted to.

Now for some reason one of my more private profiles is set by default whenever I follow someone and I'm unable to figure out what I could have change for this to happen. Where do I set which profile is the default which is added to new connections?

Not that this is useful to you, but I don't see where to change the default, either.

I see where you can change your default channel there, but that is different from default profile for a channel.

The default profile is the profile that people who have not been assigned to see a different profile will see. If you edit your profile, you'll see that it says

This is your default profile.
Visible to anybody on the internet.

up at the top. I cloned my profile so that I would have two. When editing the new profile, that message goes away.

From what Beni says, it seems that his default changed at some point, which implies that it is changeable somehow.

@Witcraft Yes, I initially wanted to write "privacy groups" but then found that's not the case. I guess that would be a valid feature request. It seeems this feature has not changed much since the old Friendica days.

@Marshall Sutherland That's a good point, I just checked and it's still the correct profile marked as default and that's also the one shown if I'm not logged in.

But whenever I add a connection it's not the default profile which is selected by default in the profile dropdown for this particular connection - which makes it even more confusing.

So there seem to be two types of default profiles: The one shown to everyone on the internet and the one shown by default to new co connections.

That is weird. I assumed the default was used for both purposes. Of course, being down to a single profile, what other choice could my account have? If it isn't difficult to recreate them, you could delete all but one profile, which would then have to be used for both and then add back the non-default ones.
